Description

The modern tequila industry dates back to the 1600's, and while the spirit is technically a form of Mezcal, it differs in the way the agave is cooked.
 

Today the piñas are cooked in steam ovens, rather than roasted in traditional earthen pits.

Aged up to 2 months

Reposado

Aged between 2 months and 1 year

Anejo

Aged between 1 & 3 years

Extra Anejo

Aged a minimum of 3 years

Cristalino

Aged a minimum of 1 year and filtered through charcoal to remove naturally occurring colorization from the barrel aging process. Typically the charcoal filtering also strips some of the woodier elements of the flavor profile
