Before detailed classfication systems exhisted, mezcaleros simply used any & all available agave surrounding them, regardless of type.
Like wine, ensambles are a blend of several agave species and varietals

Pechuga

Distilled traditionally for special occasions, Pechuga is a particular style of mezcal. It’s name comes from including a chicken or turkey breast suspended in the still during distillation.

 

The Mezcalero adds seasonal wild fruits, such as apples, plums, plantains as well as vegetables & spices. Nowadays, there are no hard and fast rules as to what a pechuga can or cannot include
