UNLIKE TEQUILA, mezcal CAN be produced in MULTIPLE MexicAN states, offering various conditions for growth and production CATEGORIzations. it can also be made from 50 different types of agave. MEZCAL CATEGORIEs

Industrial

This category allows the use of high tech equipment such as autoclaves and diffusers (for roasting), stainless steel fermentation vessels, and continuous column stills.

Artesanal

Production is limited to traditional and much more rudimentary processes. Roasting can only take place in pit ovens, while fermentation can take place in a range of vessels including wooden tanks, hollowed-out stone or tree trunks, and animal skins.

Ancestral

Forget fancy copper or stainless-steel stills, Mezcal Ancestral distillation exclusively uses clay pots fueled by fire.

  • Cooked agave, baking spices & squash

    Often described as the "workhorse" variety, Espadín accounts for somewhere between 80 and 90 percent of mezcal production. Favored for its ease of cultivation, high inulin content and relatively short time it takes to reach maturity, about 6-8 years.

    Varieties: Espadín, Tequilana, Pacifica, Castilla, Azul

  • Sweeter nutty & buttery flavors

    A rare varietal that cannot reproduce asexually. Instead it relies on bats and birds to spread its seed. Reaching maturity in 8-15 years. The small, dense and curved nature of the leaves mimic the fluttering of butterfly wings

    Varieties: Tobalá, Papalometl, Papalome, Chato

  • Lush, bright & fruity

    Often harvested wild rather than cultivated, these visually unique agaves are tall, thick, woody and shaped like match sticks. Because the fibrous stalks are often incorporated into production, these mezcals are often stone dry with wine-like tannins.

    Varieties: Madrecuixe, Bicuixe, Largo, Barril, Tobasiche, Alto

  • Deep, green & earthy

    Agave Americana is the archetypal image of the agave genus for much of the world. Another visually stunning agave with leaves that can span as wide as 10 feet, often taking upwards of 25 years to reach maturity.

    Varieties: Arroqueño, Coyote, Sierra Negra

  • Bright, beautiful acidity

    Colloquially known as "wild boar," because it’s pencas can curve downwards like a boars tusks, it often finds cracks in sheer cliff faces in which to germinate its seed. Notoriously dificult to distill because of elevated levels of sapogenins, the same natural compounds used for organic soap making result in a challenging and very bubbly fermentation.

  • Distinct, fiery spice

    Agave rhodacantha have a varying rosette size from small to large, and a high density of pencas. Some speculate that there are seven or more sub-varieties, each producing unique flavor characteristics.

  • Candied, ethereal

    Famed and mythologized for its long life and slow growth, many age estimates often range upwards of 35 years. Producing only a handful of regular offsets over its long life and imparting an unmistakable green flavor. Revered as the most aromatic of all mezcals, due to its long stay in the ground, absorbing the character of the soil.

    Varieties: Tepextate, Pichometl

  • Earthy, gritty, mineral-driven

    Often found growing at high altitudes up to 8,500 feet in cold, dry conditions. Thriving in areas of high diurnal and seasonal variation. Temperatures in these regions range from 25°F to 105°F, and swing 40 degrees in a day. This wild temperature variation helps to develop complex sugars.

    Varieties: Cenizo, Blanco

  • Fresh herbs, citrus

    This agave is often used in modern landscaping, but it can also be used to produce some very unique mezcal. Also known as “The Green Giant” for it’s large size, and it can take up to 25 years to reach maturity. Maguey pulquero is unique in that it uses added pulque, a traditional alcoholic beverage made from the fermented sap of the maguey plant to kick-start the fermentation process.

  • Light & Floral

    Agave Cupreata, gets its name from the Nahuatl word for butterfly. Commonly found in pine, oak, and palm forests, Abundant in Guerrero state, which borders Oaxaca. Cupreata resembles tobalá in appearance, if not taste. Usually Boasting aromas and flavors of ripe tropical fruit.
